  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 2 ripe bananas, mashed Use overripe bananas for sweetness
  • 1/2 cup buttermilk or milk Regular milk can be substituted with vinegar or lemon juice
  • 1 teaspoon vanilla extract
Fat
  • 1/2 cup cold butter, cubed Ensure butter is very cold for best texture

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the flour, sugar, salt, baking powder, and baking soda together.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the mashed bananas, buttermilk, and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and knead a few times.
  6. Pat into a circle about 1-inch thick and cut into wedges.
  7. Place the wedges on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.
  9. Enjoy warm or at room temperature!

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in the microwave for about 20 seconds.
