Preparation
- Preheat the oven to 325 degrees F.
- In a small bowl, add flour, baking soda, and salt. Whisk together and set aside.
- In a large mixing bowl, combine the egg, sugar, and oil. Stir until well combined.
- Add the dry ingredients to the wet and stir well. The mixture will look thick and crumbly.
- Fold in milk, vanilla extract, mashed bananas, and chopped walnuts until just incorporated.
- Line a 12-count muffin pan with cupcake liners and lightly spray with nonstick cooking spray.
- Divide the batter evenly into the liners.
Baking
- Bake for 25-30 minutes, checking regularly until a toothpick comes out clean.
- Cool muffins in the pan or on a cooling rack before enjoying.
