  • 3 pieces ripe bananas The browner, the better for flavor!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can be replaced with flaxseed meal mixed with water for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute half with oats for added texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Finally, mix in the flour.
  7. Pour the batter into a buttered 4x8 inch loaf pan.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Spread warm butter on a slice for an indulgent treat. Top with cinnamon or honey for added flavor. Store wrapped at room temperature for up to 3 days or in the fridge for about 1 week.
