  • 2 cups fresh rhubarb, chopped
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Powdered sugar for dusting

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, sugar, baking powder, cinnamon, cardamom, and salt.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Fold in the rhubarb chunks.
  6. Drop spoonfuls of the batter onto the prepared baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

Serve warm with whipped cream or vanilla ice cream. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 2 months.
