Ingredients
  

For the carrot fries
  • 4 large carrots Choose uniform-sized carrots for even cooking.
  • 2 tablespoons olive oil
  • 1 teaspoon paprika Smoked paprika can be used for a different flavor.
  • to taste none salt
For the paprika garlic aioli
  • 1/2 cup mayonnaise Can be substituted with yogurt for a lighter dip.
  • 2 cloves garlic Minced.
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the carrots into fry shapes.
Coating and Baking
  1. In a bowl, toss the carrot fries with olive oil, paprika, and salt until evenly coated.
  2. Spread the fries on a baking sheet in a single layer.
  3. Bake for 20-25 minutes, flipping halfway through, until crispy and golden.
Making the Aioli
  1. While the fries are baking, mix together mayonnaise, minced garlic, and lemon juice in a small bowl to make the aioli.
Serving
  1. Serve the baked carrot fries hot with the paprika garlic aioli for dipping.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. To reheat, use a hot oven for a few minutes. They also freeze well for up to a month.
