Authentic Cajun Jambalaya

Ingredients
  

Main Ingredients
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • to garnish Green onions

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, bell pepper, and celery; sauté until soft.
  3. Stir in garlic and sauté for another minute.
  4. Toss in the smoked sausage and cook until browned.
  5. Mix in diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring everything to a boil.
  6. Stir in the rice. Reduce heat to low, cover, and simmer until rice is cooked and liquid is absorbed, about 20-25 minutes.
  7. In the last 5 minutes of cooking, add the shrimp. Cook until just pink.
  8. Fluff with a fork, garnish with green onions, and serve.

Notes

Be careful not to overcook the shrimp. Adjust Cajun seasoning to your taste. Long-grain rice is recommended for the best texture.
