  • 2 large large cucumbers
  • 1/2 cup plain yogurt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Slice the cucumbers thinly and place them in a bowl.
  2. In another bowl, whisk together the yogurt, rice vinegar, sesame oil, soy sauce, garlic, and sugar until smooth.
  3. Pour the dressing over the cucumbers and mix well.
  4. Add the chopped cilantro, season with salt and pepper, and toss again.
  5. Chill the salad in the refrigerator for 15-30 minutes before serving.

Notes

It's best to store this salad in an airtight container in the fridge for 2-3 days, but the cucumbers may get soggy. For best results, store the dressing and cucumbers separately until serving.
