Preparation and Roasting
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub olive oil or melted butter all over the chicken.
- Season generously with salt and pepper, including inside the cavity.
- Stuff the cavity with minced garlic, lemon halves, and fresh herbs.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving.
Notes
For the crispiest skin, make sure the chicken's skin is dry before rubbing with oil. You can enhance the flavor by adding a splash of white wine into the roasting pan.
