Method
 

Preparation and Roasting
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub olive oil or melted butter all over the chicken.
  4. Season generously with salt and pepper, including inside the cavity.
  5. Stuff the cavity with minced garlic, lemon halves, and fresh herbs.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  7. Let the chicken rest for 10-15 minutes before carving.

Notes

For the crispiest skin, make sure the chicken's skin is dry before rubbing with oil. You can enhance the flavor by adding a splash of white wine into the roasting pan.
