- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth but slightly chunky.
- Whisk in the eggs, honey or maple syrup, and salt until well combined.
- In another bowl, mix the almond flour, baking soda, and cinnamon.
- Gently fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes or until a toothpick comes out clean.
- Let cool before slicing and enjoy!
Notes
This banana bread can be served with nut butter, fresh strawberries, or alongside coffee or tea. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
